And on the fourth day....

Mouse ate pizza. But this isn't your cardboard, packaged pizza. And not your delivery crapola either. NOOOO sireee. Blue Menu approved, my pals. Read it and weep (I almost did). 1 (300 g) PC Stone-Baked Flatbread 1 cup (250 mL) PC Low Fat Tomato and Basil Pasta Sauce 1 cup (250 mL) shredded part skim mozzarella cheese Half sweet red pepper, chopped 1 cup (250 mL) finely chopped broccoli (I actually used a frozen veggie mix that had some zucchini, spinach, asparagus and broccoli) 1/2 cup (125 mL) thinly sliced red onion 1 tomato, thinly sliced Bake at 425°F for 20 mins and cut in four. YUMMMMMERS! 7 points for each slice, but they're fairly large. Was worth it in the end. Crust - good. Not too thick, not too thin, not too oily or dry. Came out the perfect combo of crunchy and soft. Cheese - was the perfect amount for a mouse like myself . Toppings - Tomato made it a little runny, but I love me my veggies, which is why I added a few more (take that, rules!!). And yes, that's actually MY pizza :D There are leftovers in my fridge if anyone wants!

your pizza looks lovely.

we started making our own too - even got a toaster oven for baking.

we use all kinds of different things for crusts - soft whole grain taco shells, wraps, etc.

We keep shredded cheese in freezer - i buy in bulk and it lasts a long time that way - but we have to THWAP it against the garage floor to loosen some off each time - just part of the fun.

It looks fantastic and I want some! Actually, what I'm really craving are lot o' healthy veggies and lean meats (never thought I'd say that in my life, but that's what a constant influx of calories in Cuba will do to a girl).

Seriously though, I think from this point forward I am going to try to have 90% of my pizza intake the homemade variety to be as healthy as it can be. Me and pizza are BFF and we can never part ways, but if I"m going to shrink to fit into my wedding dress, somethin's gotta give.
