I did the drinking celebration on the weekend with the GDT TOI ladies (who were KICKASS), but last night opted for a low key celebration of my own, having made Irish soda bread and stew, just like my mother does :)
But I had another spot of luck yesterday...
Looks like I'm important people.
I totally found my pot of gold at the end of the rainbow.

WHOLE WHEAT SODA BREAD
1 1/2 cup of buttermilk
2 large eggs
1 tsp salt
1/2 cup of margarine
1 tbsp of baking powder
1 tsp baking soda
3 tbsp sugar
1 cup of flour
2 cups of WW flour
Bake at 350 for 30 mins. Makes two loaves or you can make a TON of little scones. You can also make plain bread or plain with raisin, which my brothers LOVE (me, not so much. this is my fave).
STEW
Uh, really simple
Bovril
Water
1lb of stewing beef
3 or 4 potatoes
2 cups of baby carrots
half a head of cabbage, diced
onion, diced (as much as you want. I hate it so I only put one in)
Spices (whatever you want)
Put it in the slow cooker and go nuts. Yummers.
My mom also puts in turnip, which I loathe. You can put in any old root vegetable you want. These are just the ones that are safe in this house :P
